Thyme (Thymus vulgaris) - to 2", Thyme has been
known as the "herb of courage" and its leaves are used as a
flavoring for poultry, fish, stews, soups, tomatoes, cheese, eggs,
and rice as well as tea and potpourri. It's a creeping plant that
spreads to form a dense mat. It late spring and early summer it's
covered with small, pale-lavender flowers that nearly obscure the
